
Recipe: Summertime Berry Cobbler – Easy and Delicious
Berry Cobbler
Berry cobbler is one of our favorite summer desserts to make and you can use any fruit that you have on hand. Berries definitely yield the best results in my opinion. It’s quick and simple to prepare and is always a hit at our house.
Ingredients
Filling
3 CUPS (blueberries, strawberries and/or raspberries)
1/2 CUP white sugar
2 TBSP lemon (or lime) juice
Cake
1 CUP all-purpose flour
1/2 CUP white sugar
1 CUP whole milk
2 TSP baking powder
1 STICK unsalted butter (melted)
3/4 TSP vanilla extract
1/3 TSP salt
Plain cooking spray
Make It:
Preheat oven to 375 degrees (if your oven has a convection feature I recommend using it).
First, prepare the filling.
Wash your fruit and then cut the strawberries into small 1/4 inch sized pieces, make sure all blueberries stems are removed.
Add them to a bowl with the sugar and citrus juice.
Stir well and make sure the fruit is evenly coated.
Set aside, let the mixture rest for about 20 minutes.

Next, start melting the butter, I do this in a saucepan on the stovetop at low heat.
Whisk together flour, sugar, baking powder and salt in a mixing bowl.
Once, the butter is melted, add the milk, butter, and vanilla to the dry mixture.
Whisk until batter is smooth and evenly combined.


Then, generously apply cooking spray to a 9-inch pie pan.
Pour in the batter.
Next, pour the fruit mixture directly into the center of the batter.
Press the fruit down with your spatula or wooden spoon to make it all level, but do not mix it in any way.
This will allow the cake to rise around some of the fruit but leave the center as the trademark cobbler center of pure fruit.

Bake 35 to 40 minutes at 375 degrees.
It’s done when the cake is covered in golden highlights all the way to the crust.
Then, let it cool for 45 minutes on a rack and then 45 minutes in the refrigerator before cutting and serving.
Finally, you can add whipped cream, chopped nuts or ice cream.

And enjoy with friends and family… or eat it all yourself.
