Avocado Salad – All the best parts!

This salad is such a fantastic twist and super simple to make it will become your go-to summer salad for carry-ins and cookouts.

Avocado Salad Benefits

The health benefits of all three of these ingredients are sure to make your belly, heart, and body happy.

Cucumber benefits linked to cutting cancer, aids in digestion, hair and nails and it flushes out toxins, just to name a few.

Avocado is also on the list of healthy fruits, yes it is a fruit.  Alpha-linolenic acid (an omega-3 fatty acid) and oleic acid are essential fats provided by avocado. Avocados are an excellent source of pantothenic acid, dietary fiber, vitamin K, copper, folate, vitamin B6, potassium, vitamin E, and vitamin C.

Tomatoes are also an excellent source vitamin C, biotin, molybdenum, and vitamin K. They are also an excellent source of copper, potassium, manganese, dietary fiber, vitamin A (in the form of beta-carotene), vitamin B6, folate, niacin, vitamin E, and phosphorus.

Serving: 4 (as a side salad)

Salad Ingredients

1 lb Roma tomatoes
1 English cucumber
1/2 medium red onion, sliced (optional)
Two avocados, diced
2 Tbsp extra-virgin olive oil or sunflower oil
Juice of 1 medium lemon (about 2 Tbsp)
1/4 cup (1/2 bunch) cilantro, chopped*
One tsp sea salt or 3/4 tsp table salt
1/8 tsp rainbow pepper

*Note: if you aren’t keen on cilantro, fresh dill is a good substitute


  1. Place sliced cucumber, tomatoes, avocados, and cilantro in a large salad bowl.
  2. Drizzle with 2 Tbsp olive oil and 2 Tbsp lemon juice.
  3. Toss gently to combine.
  4. Just before serving toss with one tsp sea salt and 1/8 tsp rainbow pepper
